Who we are and
what we do...
Tom Spontelli and Jodi Mardesich came
to Puerto Rico
to explore natural healing at the Ann Wigmore Institute in Aguada PR.
They taught and worked at AWI for four years before opening Natural
High.
They were amazed at the bounty of
riches that grow from the soil of the island.
Fresh coconuts, ginger, pineapple, lemongrass, tamarind, citrus of every
kind,
wild cacao (raw chocolate beans) growing in abandoned fields...!
Here were all of the fresh ingredients for making some of the world's
greatest tropical cuisines (Thai, Filipino, Japanese...) from scratch.
Yet, Puerto Rico had become a land of
fast food chains and pizza joints.
95% of the ingredients used in restaurants in PR comes from off island.
We are dedicated to using local organic
produce, sustainably harvested,
to create fresh and exciting world class cuisine. We are pioneers in the
use
of composting kitchen scraps to feed the soil of local farms,
biodegradable
take-out containers, recycling, re-using and growing from scratch.
